Shepherd's Pie with Mashed Cauliflower


Dinner was delicious tonight!! I was looking for something low carb and hearty so I decided on shepherd's pie with a mashed cauliflower topping.

Ingredients
For the meat filling:
2Tbsp oil
1c chopped onion
2 carrots, peeled and diced small
2 garlic cloves, minced
1.5lbs ground beef
1tsp kosher salt
0.5tsp ground pepper
2Tbsp flour
2tsp tomato paste
1c chicken broth
1tsp Worcestershire sauce
1tsp thyme
0.75c frozen peas

For the mashed cauliflower:
2 small heads of cauliflower (or 1 large head)
2Tbsp cream cheese
0.25c parmesan cheese, shredded
0.5tsp minced garlic
0.5tsp salt

Meat Filling Preparation
1. heat oil in a skillet on medium-high heat. One hot add onion and carrots and saute until the onions become translucent
2. add garlic, stir to combine
3. add ground beef, salt and pepper and cook until meat is browned and cooked through
4. sprinkle flour over meat mixture and combine thoroughly and cook for another minute
5. add tomato paste, chicken broth, Worcestershire sauce and thyme, bring to a boil then reduce heat to low Cover and simmer until the sauce is thickened. Approx 10-12 minutes
6. add the peas to the mixture
7. place in a 9x13 pan and set aside

Mashed Cauliflower Preparation
1. wash and remove all leaves from the cauliflower
2. boil water and place all cauliflower in, cook for approximately 8 minutes
3. pour cauliflower into a colander and remove as much as the water as possible. While still hot, place cauliflower on a clean dry towel and pat dry
4. add cauliflower to a food processor along with cream cheese, parmesan cheese, garlic and salt
5. blend until potato texture.
6. add to the top of the meat filling
7. place in the oven at 400 and bake for 25 minutes.

  1. I've always been intrigued by substituting cauliflower for potatoes! Your recent recipes look good enough that I might just have to give it a try. Thanks for posting.

  2. Looks delicious. My mom makes the best Shepard's pie ever! it is her own recipe, like a lot of things she just comes up with things and they always taste amazing! Everyone has their own way of making the popular comfort foods. Tonight I am having pesto linguine!

    1. I love all of my mom's recipes that aren't really recipes... she just puts things together and always knows how to make it amazing! Pesto linguine sounds tasty!
