Creamy Cilantro-Lime Coleslaw




I posted this coleslaw a while back with my shrimp tacos with chipotle aioli sauce recipe, but I had to share it again. This past week we celebrated a birthday and I made this coleslaw to put on the shredded pork sandwiches that my sister made. After adding this to a delicious hoagie roll covered in bbq pulled pork I realized that this specific coleslaw is really versatile and adds some awesome flavor to a variety of meals. Add this on tacos, sandwiches or have it as a side dish. It's delicious, flavorful, light and refreshing.


Ingredients
1/2c mayonnaise
1/2c sour cream
3Tbsp fresh lime juice
1&1/2tsp lime zest
1/2 serrano chile, minced
2 garlic cloves pressed (minced works well too)
1/3c cilantro, chopped
3 green onions, minced
1 bag of coleslaw mix

In a large bowl add mayonnaise, sour cream, lime juice, zest, serrano chile, garlic, cilantro and green onion. Stir until combined. Add coleslaw mix and stir well. The coleslaw might appear to be dry, but it really is the right amount of sauce. Refrigerate and serve with a delicious meal of your choice.
